About:
Set in the aftermath of a world-wide nuclear war, Fallout will challenge you to survive in an unknown and dangerous world. You will take the role of a Vault-dweller, a person who has grown up in a secluded, underground survival Vault. Circumstances arise that force you to go Outside - to a strange world 80 years after the end of modern civilization. A world of mutants, radiation, gangs and violence.
Your immediate task is to find a replacement for the broken water purification controller chip. Without that chip, your fellow Vault dwellers are doomed to dehydration or will be forced to leave the safety of the Vault for the Outside.
The core of the game revolves around your character. Fallout uses a skill-based system to allow you to fine tune your character. As you gain experience (roughly half from combat, the other half from solving adventure seeds and non-combat events), your character will grow as you determine. Combat in Fallout is tactical turn-based. You can take as much time as you need to make decisions. Choose from different types of attacks, with a variety of weapons and attack skills.
  • An RPG to the core with tons of sidequests, memorable NPCs, a brilliant storyline and much, more!
  • A vast world full of mysteries and countless ways to solve them
  • Immersive, post-apocalyptic mood, offset by tons of “easter eggs” and cultural references

There's nothing new in game files, only updated installers

I'm confused. What is the difference between the version 1.2_(27130) and v2.1.0.18? Is the difference in the installer?

bikinibottomdweller, GOG updated their versioning/installer at one point which came with updated installers for many games, but I would imagine any actual difference between the versions is arbitrary as the original Fallout hasn't seen an official update in many years.

For those wondering

Can the original game be played?
Yes.
Are there differences with the new installer?
Yes and No, let me explain.

Let's start at the beginning, With the problems of Interplay and Bethesda, GOG decided to rename Fallout as Fallout Classic and put another Fallout, at that time the only difference was the amount of bonuses or goodies that happened to be only one (the manual). And the Classic version has an installer for MAC.

The same happened with Fallout 2 and Fallout Tactics. (These games have not been updated and have not been changed.

But what about fallout_1.2_ (27130), this one does bring some interesting changes:

1. Compatible with Win10, Increase in the size of the installer, by including .NET 4.0 (The most current versions of Win10 include 4.7 or 4.8). You don't need to install anything else.

2. When you install the game, you will notice in the start menu links, there are Fallout and Fallout Classic.

3. For Fallout Classic no explanation is required, it is the game in version 1.1.

4. For Fallout this is the game in version 1.2, the official update.

5. You will notice that the high resolution mod is also installed, this is enabled for Fallout, when starting the game you can access the screen settings from options in the initial menu (in game). From the start menu (on Windows) you can access Hi-Res Config and enable it for Fallout Classic.

As you can see, you can play as purist as possible with the old version with or without high resolution or the official update.

Note: If you want to be able to scroll with the mouse wheel in the inventory and I believe that in other menus, execute Hi-Res Config from start menu (windows), in the app click on manual (your text editor, example notepad, opens) and change from 0 to 1 ALT_MOUSE_INPUT.

If you do not care about mods, there are two that are recommended, Fixt that comes in two variants, only corrections and another with mods both integrated in an installer (one per version) being able to select what you want, in this case you can get the complete one and only install fixes; the other is Fallout et tu, which uses the Fallout 2 engine (you must have Fallout and Fllout 2 installed).

► FIXT
FULLY INTEGRATED PATCHES:
- Official Interplay patches (1.1, 1.2)
- TeamX patches (1.2, 1.21, 1.3.5)
- No Children Fix
- Cathedral Crash Fix (and other fixes by Sduibek for the Cathedral, Military Base and The Glow crashes)
- Nimrod's Dialog Fixes
- FreeSpace variable is set to 0 by default, so you won't have to worry about that crash either.

FULLY INTEGRATED MODS:
- Fallout 1 Restoration Mod, version 1.0b1 [Created by Wasteland Ghost. Portions by Mynah, hamster, Wasteland Hellbringer.]
--- Invasions are now entirely optional (including Necropolis), and invasion dates can be customized, anywhere from instant to 4x their default values.
--- Deathclaw status is no longer linked, i.e. killing it on the world map or in the cave does not prevent it from appearing at the other.
- Extended Flamer Attack Mod [Created by .Pixote.]
- Endgame Mod [Created by Corpse]
- TeamX NPCs 3.5
- Sfall ddraw 1.19 (Timeslip & sfall team, + many improvements by Crafty)
- hi-res patch [Created by Mash]

OPTIONAL MODS:
- Weapon Drop Mod [Created by Josan12 and MIB88]
--- Customizable distance values.
- "Nixie Numbers" for GUI

INCLUDED UTILITIES:
- Two tools that can be run before running FalloutW.exe (not made by me) are included in the [Fallout]\Scrambled Colors Fixes folder, to help with those experiencing color palette issues.

MISC:
- Fallout 1 official manual (PDF format, version you can get from GOG.com)
► Fallout et tu
A Fallout to Fallout 2 engine conversion (also called Fallout 1@2, 1at2, or 1in2) brought to you by Rotators (the people who made FOnline: 2238 and stuff).

The aim of this project is to bring the first Fallout game into the engine of the second while utilizing Fallout 2's features wherever we can (within reason). Generally we do not try to make a 1:1 copy of the first game. So, if you want to play the 100% real deal, the very pure experience so to speak, you should grab the original Fallout 1 instead of this mod.

However, if you do not mind the one or the other change in mechanics, then Fallout et tu can be your way to go!
Features

Replicates Fallout 1 in 2 almost 1:1.
Comes with the Hero Appearance mod integrated (Bald Dude, Long Hair Dude, Punk Girl).
Selected Fallout 2 weapons have been added (sparingly!) to the game world in ways that don't break the game balance.
Fallout 2 styled merchant inventory restocking (Optional).
Party members and generic NPCs can be pushed out of the way.
Party members level up and change their appearance based on worn armor.
Party members can be controlled in combat (Optional).
Automatic door opening and closing (Optional).
Traverse the wastes on your very own motorcycle (Optional)!
Continue playing after the main story has been completed (Optional).
Lots of bugfixes, making the game run more stable than even the original with patches.

Not to forget:

This project is a more accessible modding platform and allows the creation of complex modifications, which wouldn't be possible with the engine of the first game!

I do not know if I am allowed to put the links to the mods, but they are not difficult to find, the first is found on the No Mutants Allowed page, and the second on GitHub.
